The raw green coffee beans are sent out to the coffee factory from the farms. Once unloaded, the coffee is sifted with a machine and then washed to remove any dirt, dust or debris. The coffee is grouped to be processed as roasted coffee, green coffee, or instant coffee.
Green coffee has become a popular coffee drink in the coffee, health and weight loss community. For these reasons, many companies are also selling green coffee. So, it means they are sold completely raw and used to make coffee as they are green coffee has chlorogenic acid which gives it its antioxidant and anti-inflammatory properties. It contains the same amount of caffein you would find in roasted coffee. Green coffee helps with weight loss, is a great detoxifier, helps regulate blood sugar and blood pressure and enhances mood and performance.
Roasting
The next process involves roasting. This transforms the coffee from its fresh green state to a light brown or dark bean depending on the kind of roast. All factories have a personal temperature range to which they roast their Atlas coffee club for specific kind of taste.
Grill roasted coffee
For the next step, the roasted coffee beans are transferred to an automated grinder. Factory grinders are bigger and stronger than any kind of home grinder. It takes a couple of hours to grind the coffee. during the process, the coffee aromas are trapped through nitrogen gas that is contained to be used later in the process.
Brewing stage
Given the weight of the coffee being processed, it is brewed in water in giant extraction containers. This process produces tones of black coffee.
The evaporation stage
The brewed coffee is filtered to remove any large coffee chunks that may ruin the results then the coffee is taken to an evaporation chamber. It takes several hours to separate the water from the coffee extract.
Freezing
First, the coffee extract is prechilled to prepare it for freezing. It is then frozen in a giant freezer at temperatures ranging from 40 – 60 degrees Fahrenheit. Once frozen it is separated to granules.
Sublimation
Sublimation is used to convert the water in the granules that is in the form of ice to a gas without becoming a liquid. In this step, the coffee is heated in a vacuum and the water vaporizes in the form of steam. The coffee granules are now completely dry.
Reintroducing the lost aroma
Remember the nitrogen gas collected during the brewing process? It had trapped aroma of the coffee. before being packaged, the gas is pored over the coffee granules to reintroduce the aroma back into the ground coffee.
Packaging
Finally, the freeze-dried coffee is packaged into small packets or jars. The packets and loids are air-tight sealed and sent out to the market.
