Ruth’s Chris History

Ruth's Chris

Ruth Fertel is the founder of the award-winning Ruth’s Chris Steak House. Born to a family of 14 in New Iberia, Louisiana, Ruth grew up to become a successful businesswoman and entrepreneur. The original Ruth’s Chris restaurant opened its doors in Baton Rouge, Louisiana, in 1975. The business has since grown to include more than 300 locations around the world.

In the early 70s, Ruth was working as a television news reporter when she met Mike McCalvin, an electrician. The two fell in love and got married soon after. It was during this time that Ruth learned about the concept of what would later become Ruth’s Chris. She was invited to attend a customer appreciation lunch at Charlie Parker’s on Veterans Boulevard in Miami.

The restaurant offered signature cuts of prime steak cooked to customers’ specifications alongside creamed spinach and buttered potatoes— favorite comfort foods of Ruth’s from her childhood in New Iberia, Louisiana. Ruth saw a successful business model and a way to turn her favorite childhood foods into a restaurant concept.

She envisioned a steak house that would serve up signature cuts of prime rib-eye steaks as well as her beloved creamed spinach and buttered potatoes. In 1972, she and Mike sold their home in Baton Rouge and moved to Costa Mesa, California. There, Ruth learned the ins and outs of the restaurant business by working as a waitress, bartender, and cashier at Charlie Parker’s.
